At the vine

The preservation of the soils and their life is very important. Ploughing, no treatments, natural manure and biodynamic work on slopes of over 25° where olive trees and maquis used to grow : that is how the domain works its soil.

The vines are thus grown naturally, with no weedkillers, chemical fertilisers or synthetic products. Picking is always completed by hand.

 Jean-Baptiste then realised that the quality of his wines crucially depends on the way he maintains his vineyard ; the aim being to find the truest expression of the soil.

At the cellar

 

 

It all begins at the vineyards. The work in the cellars is done with the greatest respect for the produce, man, and the environment.

 

The production methods are done plot by plot, gently, slowly and naturally : no cap-punching, no yeasting, no acidification or systematic filtration.

 

Furthermore, sulphites are only used in homeopathic amounts and only when bottling – depending on analysis. If enough natural sulphites remain, none will be added.

The vinification and aging are done in stainless steel and concrete vats. The length of time varies but is often significant. We let the wines mature interrupted only by clarification and racking. We do not have an oenologist at the estate. We strive to be as non-interventionist as possible.
